Ingredients
  

  • 2 medium apples Granny Smith, Fuji, or Gala
  • 1 cup all-purpose flour or gluten-free flour blend
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1/2 cup chopped nuts or raisins for added texture

For the glaze (optional):

  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions
 

Prepare the Apples:

  • Peel, core, and chop the apples into small pieces. Set aside.

Mix Dry Ingredients:

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon, nutmeg, and salt. Stir to mix evenly.

Combine Wet Ingredients:

  • In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter.

Make the Batter:

  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped apples (and optional add-ins like nuts or raisins).

Shape and Bake:

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Drop spoonfuls of batter onto the baking sheet, shaping them into fritter-like mounds. Bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.

Make the Glaze (optional):

  • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the warm fritters once they are out of the oven.
