Ingredients
  

Main Ingredients:

  • 2 cups cooked white rice cooled
  • 1 cup heavy whipping cream or Cool Whip
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple drained
  • ½ cup maraschino cherries halved and drained
  • 1 cup mini marshmallows

Optional Additions:

  • ¼ cup shredded coconut for a tropical twist
  • ¼ cup chopped nuts walnuts or pecans for crunch
  • ½ cup mandarin oranges drained
  • Chocolate chips or cocoa powder for a chocolate version

Instructions
 

Step 1: Cook & Cool the Rice

  • Cook 2 cups of white rice according to package instructions.
  • Let the rice cool completely to prevent melting the whipped cream.

Step 2: Prepare the Creamy Mixture

  • In a large mixing bowl, whip 1 cup of heavy whipping cream until soft peaks form. (If using Cool Whip, skip this step.)
  • Add ¼ cup of sugar and 1 teaspoon of vanilla extract, then mix until combined.

Step 3: Mix in Fruits & Marshmallows

  • Gently fold in the cooled rice, 1 cup crushed pineapple, ½ cup halved maraschino cherries, and 1 cup mini marshmallows.
  • Stir until evenly coated with the creamy mixture.

Step 4: Chill & Serve

  • Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
  • Serve chilled, optionally garnished with extra cherries or shredded coconut.
