Main Ingredients:
- 2 cups cooked white rice cooled
- 1 cup heavy whipping cream or Cool Whip
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple drained
- ½ cup maraschino cherries halved and drained
- 1 cup mini marshmallows
Optional Additions:
- ¼ cup shredded coconut for a tropical twist
- ¼ cup chopped nuts walnuts or pecans for crunch
- ½ cup mandarin oranges drained

Step 1: Cook & Cool the Rice

In a large mixing bowl, whip 1 cup of heavy whipping cream until soft peaks form. (If using Cool Whip, skip this step.)
Add ¼ cup of sugar and 1 teaspoon of vanilla extract, then mix until combined.
Step 3: Mix in Fruits & Marshmallows
Gently fold in the cooled rice, 1 cup crushed pineapple, ½ cup halved maraschino cherries, and 1 cup mini marshmallows.
Stir until evenly coated with the creamy mixture.
Step 4: Chill & Serve
Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
Serve chilled, optionally garnished with extra cherries or shredded coconut.
