Ingredients
  

  • 1 lb ground turkey
  • 1 cup fresh cranberries
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 2 cups low-sodium chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1-2 chili peppers optional for spice
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking
  • Fresh cilantro optional, for garnish

Instructions
 

Prepare the Ingredients:

  • Dice the onion, bell pepper, and garlic. Rinse and drain the beans. Set aside the cranberries.

Cook the Ground Turkey:

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned (about 5-7 minutes).

Sauté the Vegetables and Spices:

  • Add the diced onion, bell pepper, and garlic to the pot with the turkey. Sauté for about 5 minutes, or until the vegetables soften. Stir in the cumin, chili powder, salt, and pepper.

Add Cranberries, Tomatoes, and Beans:

  • Add the fresh cranberries, diced tomatoes, kidney beans, black beans, and chicken broth to the pot. Stir everything together.

Simmer:

  • Bring the mixture to a simmer over medium heat. Reduce heat to low and let it simmer uncovered for 20-30 minutes, allowing the flavors to meld together. Stir occasionally.

Serve and Garnish:

  • Taste the chili and adjust seasoning if needed. Serve in bowls and garnish with fresh cilantro if desired.
